Banana Bread Bake-Off

This weekend hubby and I decided to try a new Banana Bread recipe. We’ve been making our standard banana bread recipe for years, but this time we want to use up a bunch of oranges that we had on hand. AND boy did we hit he jackpot! The addition of fresh orange and an orange zest glaze really kicked this recipe up a notch! We pulled it from Back for Seconds and it did not disappoint!
I made our standard banana bread recipe in a loaf pan and he made the new one to include orange juice and orange zest in our bundt pan. I’m sharing the recipe below that includes the orange juice and zest as this is the one we’ll be making from now on!
Banana Orange Bread Recipe:
Glaze:
- 1 cup powdered sugar
- 1-2 tablespoons orange juice
- orange zest
Bread:
- 1/2 cup unsalted butter
- 1/2 cup oil
- 2 cups granulated sugar
- 3 medium very ripe bananas (mashed)
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1/2 cup orange juice
- 2 tablespoons orange zest
- 3 eggs
- 1tsp baking powder
- 1 tsp baking soda
- 2 1/2 cups all purpose flour
Preheat oven to 350. In a large mixing bowl, cream together the butter, oil, and sugar until light and fluffy. Add mashed bananas and mix well. Add salt, vanilla, orange juice and zest and mix until well combined. Add eggs, one at a time, mixing after each addition. Mix in baking soda and baking powder. Mix on low, gradually adding flour until combined. Divide batter evenly between to 8.5″ x 4.5″ loaf pans or 1 large bundt cake pan (like we did). Bake 50 minutes or until toothpick inserted into the center comes out clean.
Allow to cool 15 minutes before removing from pans. Let cool completed before glazing.
Glaze: Whisk together powdered sugar and orange juice until it reaches a glue like consistency. Add more juice if too thick, or more sugar if too runny. Drizzle over cooled loaves. Add orange zest to the top, if desired.

I hope you enjoy this recipe as much as we have!
XO, JuJu
